Sometimes you want dessert, and you want it NOW! I created this luscious chocolate mug cake recipe on the fly one night when I just didn't want to commit the time to baking a full dessert recipe. The cake is light with just the right amount of chocolate flavor and the center...OMG the luscious and fudgiest pool of runny chocolate perfection. The best part about this cake? It only takes two minutes in your microwave and you're ready to enter chocolate heaven. Oh, and the only dish you have to clean is one little mug. It's a chocolate lovers dream!
Chocolate Lava Mug Cake
Ingredients:

3 Tbsp Anthony's Organic oat fiber
1/8 tsp salt
1/4 tsp baking powder
1/2 tsp vanilla extract or vanilla bean paste (the paste will give you a stronger vanilla flavor, which I prefer) my favorite is Nielsen-Massey pure vanilla bean paste
1 egg white
1/4 C unsweetened chocolate almond milk (you can also use regular almond milk, the cake will still turn out delicious, just a little less chocolatey)
*1/8 C chopped sugar-free chocolate (my favorite is Sinless Raw Chocolate) or sugar-free chocolate chips (optional)
Directions:
In a large microwave-safe mug combine the oat fiber, cocoa powder, swerve, salt, and baking powder. Stir with a fork to combine. Then add the vanilla, chocolate almond milk, and egg white and whisk with the fork until completely combined. Place mug in microwave and cook for two minutes, allow to sit in the microwave to cool for an additional minute. Enjoy!
